Emoji cookies!

Milo asked for a soft, non chewy cookie with icing and a lot of sprinkles (whose kid is he!? Icing!? A lot of sprinkles!?! Eee to the ww!)…I had a lil chat with ChatGPT and boom! the softest, nicest cake kinda cookies I have made. Of course there was some negotiating, and I could not put 2 sticks of butter, what in the helllllll…so we went a lil less than half a stick, and the rest in apple sauce. It did the trick. Some of them look perfect too…like tiny kawaii cookie emojis. Yes, I am easily amused, but that’s what I love about me!
Here is the recipe…

Ingredients:
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 stick unsalted butter, softened
1 cup unsweetened applesauce
1 1/2 cups granulated sugar
2 large eggs
4 teaspoons vanilla extract

Instructions:

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter, applesauce, and granulated sugar until light and fluffy, about 2-3 minutes.
Add the eggs and vanilla extract, beating well to combine.
Gradually add the dry ingredients to the wet ingredients, mixing until well combined and a dough forms.
Roll the dough into balls (about 1 tablespoon of dough per cookie) and place them onto the prepared baking sheets, leaving some space between each cookie.
Flatten each ball slightly with the palm of your hand or the bottom of a glass dipped in sugar.
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
